VIDALIA ONION PIE

7 Sweet Vidalia Onions -- thinly sliced

1 tablespoon olive oil

3 tablespoons butter

2 eggs

1 cup heavy cream

2 tablespoons flour

1 teaspoon salt

1/8 teaspoon pepper

1 pinch nutmeg

2 ounces Swiss cheese -- grated

pie crust

 

1. Prepare and partially bake a crust to fit a 9" pan. You can make your

own or buy one at the grocery store. Another options is a Ritz crumb

crust. To make the Ritz crumb crust, mix together 1 cup Ritz crumbs and

1/2 stick melted butter; press in to pie plate.

2. Saute onions in oil and butter over a low heat until golden yellow.

This will take easily 30 minutes!

3. Beat together eggs, heavy creamf, salt, pepper and nutmeg; add onions

and half of Swiss cheese.

4. Pour in to crust and sprinkle with remaining cheese on top.

5. Bake at 375 for 25-30 minutes or until golden brown.

NOTES : You can add fresh herbs (basil is great) and/or nuts to the

mixture.

Cheddar cheese and Monterey Jack are good cheeses to substitute.

This makes a great brunch dish. It tastes amazing!

Vidalia onions are plentiful in the early spring in your grocery

store.
